Anyone know what an acceptable consumption of oil is on an E38 with 200k
miles?

Not knowing what engine you have, it's hard to say. But anything over 1
quart
per 1000 miles is too much.

Thanks for that. FWIW it's a M52.

Well I would be upset if it actually used 1pt between changes (@8K-10K miles)

However, my old E38 with the 4.4 petrol V8 didn't need any oil between 10k mile
changes and it had 192k on the clock when I sold it.

My M52 (in an 155k miler 1999 E36 323i) uses no oil at all between changes.
When I got this vehicle, I was told by BMW that as it was a 1999-on model,
it was an alusil block not nikasil so wouldn't suffer the possible grief of
the earlier M52s.
